Braised BBQ Pork Shoulder

Ingredients List

  • 3/4 c (180 ml) St-Hubert Chicken & Ribs BBQ sauce
  • About 3 lbs (1.35 kg) pork shoulder roast
  • 2 tbsp (30 ml) lime juice
  • 2 onions, sliced into rings
  • 1/2 tsp (2 ml) cumin seeds, crushed
  • 1/2 tsp (2 ml) coriander seeds, crushed
  • Salt and freshly ground pepper

Preparation Instructions

  1. In a large pan, heat half of the oil on medium-high, brown half of the chicken cubes. Transfer to a plate.
  2. Heat the remaining oil and sauté the remaining chicken.
  3. Return all the chicken to the pan, reduce heat to medium, add sauce and coconut milk.
  4. Simmer uncovered 12 to 15 minutes or until chicken is cooked through.
  5. Add cilantro and serve with basmati rice and veggies.
