Ingredients List

  • 1/2 c (125 ml) St-Hubert Piri-Piri Sauce
  • 4 c (1 l) coarsely chopped lettuce or spring mix
  • 2 c (500 ml) cooked quinoa or rice
  • 1 can 19 oz (540 ml) black beans, rinsed and drained
  • 1 c (250 ml) corn kernels
  • 1 tomato, chopped
  • 1 avocado, sliced
  • 1 your choice pepper, chopped
  • 1/2 tsp (2 ml) lime zest
  • 2 tbsp (30 ml) lime juice
  • Fresh cilantro or basil to taste

Preparation Instructions

  1. In 4 bowls, divide the lettuce.
  2. Top by making sections and alternating colours. For example: quinoa, black beans, corn, tomato, avocado, peppers.
  3. Mix the sauce with the lime zest and juice.
  4. Use the piri-piri sauce as a dressing and garnish with herbs, if desired.
