Ingredients List
1/2 c (125 ml)
St-Hubert Piri-Piri Sauce
4 c (1 l) coarsely chopped lettuce or spring mix
2 c (500 ml) cooked quinoa or rice
1 can 19 oz (540 ml) black beans, rinsed and drained
1 c (250 ml) corn kernels
1 tomato, chopped
1 avocado, sliced
1 your choice pepper, chopped
1/2 tsp (2 ml) lime zest
2 tbsp (30 ml) lime juice
Fresh cilantro or basil to taste
Preparation Instructions
In 4 bowls, divide the lettuce.
Top by making sections and alternating colours. For example: quinoa, black beans, corn, tomato, avocado, peppers.
Mix the sauce with the lime zest and juice.
Use the piri-piri sauce as a dressing and garnish with herbs, if desired.
