Roasted Sweet Potatoes with Bacon, Jalapeno BBQ Sauce

Ingredients List

  • 1 can of 14 oz (398 ml) St-Hubert BBQ Sauce or 25% Less Salt BBQ Sauce
  • 2 large sweet potatoes 
  • 3 green onions, chopped
  • 1/2 c (125 ml) chopped cooked bacon 
  • 1 or 2 fresh seeded and finely chopped jalapenos or marinated hot pepper rings
  • 1/3 c (80 ml) chopped fresh cilantro
  • 1 ¼ c (310 ml) your choice grated cheese (cheddar, mozzarella, Gouda, etc.)

Preparation Instructions

  1. Preheat oven to 375 °F (190 °C).
  2. Cut sweet potatoes into 1/2" (1.25 cm) slices and place in an ovenproof dish.
  3. Add the sauce and bake for 20 minutes or microwave for 5 to 7 minutes depending on the oven's power. The potatoes should be tender.
  4. In a bowl, mix together the green onions, bacon, jalapeno and cilantro.
  5. Place the sweet potatoes side by side.
  6. Top with the green onion pepper mixture.
  7. Sprinkle with cheese and broil.
  8. Serve with the sauce.
