Sautéed Chicken with Pesto

Ingredients List

  • 1 can St-Hubert 14 oz (398 ml) St-Hubert À La King Sauce
  • 1 tbsp (15 ml) olive oil
  • 1 1/3 lb (600 g) chicken breast, cubed
  • 1 package mushrooms, quartered
  • 1 red onion, chopped
  • 1 yellow pepper, chopped
  • 4 zucchini, cut into semi-circles
  • 1/3 c (80 ml) pesto
  • Salt and pepper to taste
  • 1 large tomato, small dice
  • 1/4 c (60 ml) grated Parmesan

Preparation Instructions

  1. In a large skillet or saucepan on medium-high, heat oil and sauté chicken for 5 minutes. 
  2. Add mushrooms and onions and cook for 2 minutes.
  3. Add zucchini and peppers, stir.
  4. Add sauce, pesto and season. Simmer 5 to 10 minutes.
  5. Divide into 4 bowls or soup dishes and garnish with diced tomato and Parmesan.
