Ingredients List
1 can St-Hubert 14 oz (398 ml)
St-Hubert À La King Sauce
1 tbsp (15 ml) olive oil
1 1/3 lb (600 g) chicken breast, cubed
1 package mushrooms, quartered
1 red onion, chopped
1 yellow pepper, chopped
4 zucchini, cut into semi-circles
1/3 c (80 ml) pesto
Salt and pepper to taste
1 large tomato, small dice
1/4 c (60 ml) grated Parmesan
Preparation Instructions
In a large skillet or saucepan on medium-high, heat oil and sauté chicken for 5 minutes.
Add mushrooms and onions and cook for 2 minutes.
Add zucchini and peppers, stir.
Add sauce, pesto and season. Simmer 5 to 10 minutes.
Divide into 4 bowls or soup dishes and garnish with diced tomato and Parmesan.
