Ingredients List

Toppings Suggestions:

  • 1 Italian tomato, seeded and diced
  • 1 avocado, thinly sliced
  • 1/2 bell pepper of your choice, diced
  • 1/2 small red onion, thinly sliced, or 80 ml (1/3 cup) pickled red onion
  • 1/4 English cucumber, diced
  • 250 ml (1 cup) cheddar cheese, finely diced
  • 125 ml (1/2 cup) sliced red cabbage
  • 125 ml (1/2 cup) corn kernels
  • 125 ml (1/2 cup) canned chickpeas, rinsed and drained

Preparation Instructions

  1. Heat the St-Hubert Piri-Piri Style Chicken according to packaging instructions.
  2. In a bowl, mix mayonnaise with cilantro and lime zest and juice.
  3. In two bowls, divide the cooked rice and piri-piri style chicken. Add toppings. Season with salt and pepper.
  4. Drizzle with lime mayonnaise and, if desired, St-Hubert piri-piri sauce.
